Cadbury Egg Chocolate Chip Cookie Recipe

I am obsessed with Cadbury Eggs. I could literally eat the entire bag in one sitting. I haven’t yet, but I probably could! The only thing better than eating Cadbury Eggs, is eating them baked inside a perfectly chewy chocolate chip cookie. My mouth is watering just thinking about it. If you haven’t tried Cadbury Egg Chocolate Chip Cookies then you haven’t lived, but I’ve got your back! Here is the recipe:

Cadbury Egg Chocolate Chip Cookies

Yields approx. 2 dozen cookies

1 cup unsalted butter
3/4 cup light brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1 cup cake flour
1 3/4 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp coarse sea salt
1 cup milk chocolate chips
1 bag mini cadbury eggs

Pre-heat oven to 375 degrees.
Beat softened butter. Add sugars and beat until smooth and creamy. Add the eggs and vanilla. Beat until incorporated. Add the cake flour, all purpose flour, baking powder, baking soda and salt. Beat together until soft dough forms. Fold the chocolate chips into the batter. Take large spoonfuls of dough and roughly shape into a circle. Slightly flatten the dough. Add 4-5 cadbury eggs on top of each cookie dough ball.
Bake for 8-10 minutes.
