Favorite Chocolate Chip Cookie Recipe – with a twist!

Where are all of my pumpkin lovers at?
I have been on the hunt for a delicious chocolate chip cookie recipe for a while now and I finally found it! It comes from the blog “A Bountiful Kitchen” and you can find the original recipe post here. These are a copycat version of the Levain Bakery cookies in NYC (my favorite city so of course these cookies are the best!). Since I love fall and everything pumpkin flavored, I had to add some pumpkin chips that I found at Target. Pumpkin + chocolate + cookie = DIVINE!
These are meant to be large cookies – 6 oz each! But I baked them at about half the size (roughly 3 oz) for about 8 minutes and they turned out perfect. I was also able to get about 2 dozen cookies so they went a lot longer too. I omitted walnuts as the original recipe includes so I made a couple adjustments to the recipe. You can add just chocolate chips or try another flavor such as butterscotch, white chocolate or even crushed toffee chunks. Whatever suits your craving!
Also it’s always nice to have cute little helpers that will lick the beaters when you’re done with them 😉

Levain Bakery Chocolate and Pumpkin Chip Cookies
Prep: 10 min Cook: 8 min Yields: 2 dozen cookies
Ingredients
1 cup unsalted butter
3/4 cup light brown sugar
1/2 cup sugar
2 eggs
1 cup cake flour
1 3/4 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp coarse sea salt
1 cup semi sweet chocolate chips
1 cup pumpkin chips
Instructions
- Pre-heat oven to 400 degrees.
- Beat softened butter.
- Add sugars and beat until smooth and creamy.
- Add the eggs and beat until incorporated.
- Add the cake flour, all purpose flour, baking powder, baking soda and salt. Beat until mixed together.
- Fold in the chocolate and pumpkin chips into the batter.
- Take large spoonfuls of dough and roughly shape into a circle. Do not flatten the dough.
- Bake for 8-9 minutes.
- The cookies are done when the top is a bit golden.
- Do not over bake. Let cool for 15 minutes before serving.
